Quick answer: Garam masala is a warm, aromatic blend (cinnamon, cardamom, cloves, cumin, coriander, pepper) usually stirred into cooked dishes. Chaat masala is a tangy, salty finishing blend built on amchoor (dried mango powder) and often black salt, sprinkled on chaat, fruit, potatoes and salads. They aren't interchangeable.

Both are masalas, or spice blends, but one warms a dish and the other brightens it.

Can you substitute one for the other?

Not well. Chaat masala would make a curry sour and salty, and garam masala won't give fruit or chaat the tangy kick it needs. If you're out of garam masala, see our garam masala substitutes. If you're out of chaat masala, a pinch of amchoor with roasted cumin and a little black salt gets you closer.

Because chaat masala usually contains salt, taste before adding more salt to the dish.
